Our garden is still under a thick blanket of snow and even if it is nowhere near spring I love
looking at the beautiful sight of the green wood of the structure contrasting against the
pure white snow. I like to imagine the soil sleeping deeply, storing up and processing all its
nutrients so it will be ready to grow grow grow when spring finally decides to make an
appearance. Despite the wintery chill we hosted a Health and Wellness food tasting at
school focussing on fava beans and potatoes - 2 vegetables we plan to grow this summer
in the garden. We had a great mixture of recipes prepared by parent helpers as well as
Monica the retail dietician at Village Supermarkets from Shoprite who prepare our hot
lunches at CDS. Monica has been very involved since we began our garden project with
her desire to educate children about ‘garden to table’ and where food comes from.
Recipes included fave bean and pea dip, three bean stew, dauphinoise potatoes, home
made oven baked potato chips, mashed potato with carrots and onions, and warm potato
salad. Children across all grades thoroughly enjoyed themselves and tucked in with gusto
over the lunch period. Mr. Allen another parent, also prepared a real life ‘how to plant
potaoes in a bag’ display which was received with much interest!
